“Tokyo Ramen Festa 2023” Act 2, France’s “speciality” attacks / “Espuma pork bone with lobster from Brittany”

The ramen event “Tokyo Ramen Festa 2023” is being held at Komazawa Olympic Park in Tokyo, which has become an autumn tradition. The first act, which ran until October 31st, brought together popular ramen shops from Hokkaido and Sapporo in the north, and Kyushu and Kagoshima in the south, and many people visited.
And from the 1st of this month, the second act begins with a complete replacement of all ramen shops. This time, I would like to introduce five shops that have become a hot topic among ramen connoisseurs, along with comments from the owners.

“Kodawari Ramen”; A popular shop in Paris, France with long lines. Published in the Michelin Guide. Currently open at the second act of “Tokyo Ramen Festa” being held at Komazawa Olympic Park in Tokyo (until November 5, 2023). The menu is “Espuma pork bone ramen with lobster from Brittany”.
