A former member of Yokohama’s popular shop Hechikan(丿貫) group has become a hot topic after opening an independent shop in Tokyo this October. First up is Mendokoro Niboshikou (麺処 にぼし香 Chuo Ward, Tokyo), which will open on October 25th (2023).
A shop run by the former manager of Hechikan''. There are two types of menu,Dried Sardines Noodle(煮干蕎麦 Niboshi Soba)” and Rich Sardines Dried Noodle(濃厚煮干蕎麦 Noukou Niboshi Soba),'' and a limited menu. Three types of Aedama;Extra dressed noodles (black vinegar, back fat, and monkfish liver). The menu structure has inherited the style ofHechikan”.

Menan Rikyu (麺庵 利休 Menan Rikyu / 2 minutes walk from Hongo-sanchome Station on the Tokyo Metro Marunouchi Line and Toei Oedo Line)
Opens on October 17, 2023. The owner used to work at Hechikan(丿貫), a popular sardine ramen shop in Yokohama, but he started his own shop with a different taste from where he trained. However, this ramen is amazingly delicious. It seems that other menu items will be introduced gradually, so expectations are high.

■Hiroshi Osaki (大崎 裕史): Self-proclaimed “The man who has eaten the most ramen in Japan.” As of the end of March 2022, approximately 27,500 bowls of ramen have been consumed. Representative director of Ramen Data Bank Co., Ltd. and director of the Japan Ramen Association. He operates the web and mobile “Ramen Database.”
